Granola cups with peanut butter, banana and chocolate!

Granola cups are a great recipe for our Nolas! Oat flakes and peanut butter contain plant-based protein, while banana and dark chocolate provide magnesium. Just the right combination for a good start to the day or for a mid-afternoon slump. The cups are ideal for meal prep as they are easy to prepare in advance, store in the freezer and defrost as required.
Important: The rice syrup should not be replaced with other sweeteners such as honey or agave syrup, otherwise the cups will be too sweet.
Ingredients for 10 granola cups
- 250 g crunchy muesli
- 70 g rice syrup
- 100 g peanut butter
- 2 tsp maple syrup
- 1 tsp vanilla paste
- A little jam of your choice
- ¾ of a small banana, in thin slices
- 70 g dark chocolate
- Some chopped, salted peanuts for garnish, optional
- Silicone muffin moulds
Preparation
- Briefly grind the müesli in a blender until there are no more coarse pieces. Mix with rice syrup.
- Divide the mixture between 10 muffin moulds, form a cup with your fingers and press down firmly.
- Mix the peanut butter with the maple syrup and vanilla paste.
- Spoon a teaspoon of jam onto the base of the cups, arrange the banana slices on top and pour the peanut butter mixture over the top.
- Leave the cups to cool in the freezer while the chocolate melts.
- Melt the chocolate slowly over a bain-marie and spread over the cups with a spoon.
- Garnish with some chopped peanuts if desired.
